Spinach Salad with Spicy Mustard Vinaigrette ** Recipe by: Dawn Heeke, RD Nutrition Solutions, LLC INGREDIENTS • 3 cups baby spinach leaves • 8 cherry tomatoes • ¼ sliced cucumber • 4 tablespoons spicy mustard vinaigrette dressing (see recipe below) SPICY MUSTARD VINAIGRETTE • 2 Tablespoons spicy mustard • 4 teaspoons balsamic vinaigrette • 2 teaspoons canola oil • 3 tablespoons water • 3 packets of splenda • Mix/blend all ingredients above and refrigerate Nutrition info per serving (1 tablespoon): Calories: 19 calories Fat: 2 grams Protein: .1grams Carbs: .5 grams DIRECTIONS 1. Combine all ingredients in a small bow; Mix well Nutrition info per serving (salad makes 2 servings) Calories: 73 calories Fat: 4 grams Protein: 0 grams Carbs: 8 grams Low Calorie Shrimp Creole ** Recipe by: Chris Ilcheson, Dietitian Nutrition Solutions, LLC INGREDIENTS • 1 pound 21-21# peeled and de-veined shrimp • 1 cup chopped onions • 1 cup chopped celery • 1 cup chopped green pepper • 1 cup chopped red pepper • 1 teaspoon olive oil • 12 oz of Walden Farms Calorie Free Seafood/Cocktail Sauce • 1 can plain diced tomatoes • Salt/pepper to taste • 1-3 teaspoons of crushed red cayenne pepper (as you desire for heatness) • 1 teaspoon of cayenne seasoning • 1 cup instant rice DIRECTIONS 1. Spray pan with Pam cooking spray. 2. Add 1 teaspoon of olive oil to pan 3. Chop onions, celery, and peppers. 4. Saute onions, celery, and peppers. 5. Add 1 can of diced tomatoes. 6. Add 12 oz of Walden Farms Seafood Sauce. 7. Add 1 teaspoon of Creole Seasoning. 8. Add crushed red pepper. 9. Allow to simmer. 10. Cook rice. 11. Cook Shrimp. 12. Add Shrimp to peppers, onions, tomatoes, and sauce. 13. Serve over rice. Yields 6 Servings Nutrition info per serving: Calories: 229 calories Fat: 2.5 grams Protein: 19 grams Carbs: 31 grams grams
